Healthy Breakfast Scramble
Healthy Breakfast Scramble
I made this recipe this morning and it was delicious and healthy. I forgot to take a picture, but it is very colorful with all the different vegetables and the eggs. You could actually serve this dish for breakfast, lunch, or dinner.
Ingredients:
1 tbsp. olive oil
1 onion, diced
2 kale leaves, deveined and chopped
2 tomatoes, diced
1 4-oz can sliced mushrooms
6 eggs
4 oz. cheddar cheese, shredded
Directions:
Saute vegetables in olive oil in skillet over med/low heat until onions are clear and kale is wilted. Sprinkle with salt and pepper. Beat eggs in a bowl add salt and pepper. Add eggs to vegetable mixture and scramble until eggs are done. Add cheese and stir until melted. You can add additional cheese as a garnish when you dish it up if you like.

Cream Cheese Fruit Dip
We have a strawberry farm close to our house. I went to the stand today and picked up two big buckets of strawberries. My granddaughter wanted dip for them so I made this recipe.
Ingredients:
8 oz. cream cheese
**I used 1/3 less fat
1/2 cup confectioner's sugar
1 8 oz. cool whip
Directions:
Beat cream cheese with mixer until light and fluffy. Add confectioner's sugar continue beating until it is all incorporated. Add cool whip and beat until the cream cheese mixture and cool whip are completely blended. Use dip with fresh strawberries or other fruit.

Meatball Casserole
Ingredients:
1 tbsp. olive oil
1 large onion, diced
1 large bell pepper, diced
2- 4 oz. or 1 8 oz. can sliced mushrooms
1 jar pasta sauce
1 can diced tomatoes
1 can mushroom soup
25-30 frozen Italian meatballs
1 lg box whole wheat penne pasta
Parmesan cheese
1 8oz. pkg. shredded mozzarella cheese
Directions:
Spray pan with cooking spray. Heat oil in pan. Saute onions, peppers, and mushrooms until onions are clear and peppers are softened. Add meatballs, tomatoes, pasta sauce, and soup. Sprinkle Italian seasoning over sauce. While sauce is cooking cook pasta according to directions on the box, and drain.. Pour drained pasta in 9x13 casserole dish. Then, pour sauce over the pasta and stir gently. Sprinkle with Parmesan cheese and mozzarella cheese. Cover dish with foil sprayed with cooking spray. Bake at 325 degrees for 30 minutes or until the dish is thoroughly heated and cheese is melted.

Mixed Fruit Smoothie
I had some fruit at home that was getting ripe so I used it to make this fruit smoothie. Then I took part of it out and added veggies to it to make my green drink. I was also thinking that I could use part of it to make a mixed fruit bread, like banana nut bread, but with other fruits. It tastes almost like applesauce, but has other fruits in it as well. If you think of other ways you could use this combination for baking please share them. I know some people add applesauce in their brownies in place of part of the oil. I don't see why you couldn't use this in the same way. The kids will like it too.
Ingredients:
1 can crushed pineapple, in it's own juice
**you could use fresh pineapple
4 or 5 small bananas, peeled
2 pears, peeled
2 apples, peeled
Directions:
I always try to start with the ingredient that has the most liquid so it helps the blender work better, so in this recipe I started with the pineapple. I gradually added the other fruit and blended after each addition. This makes a blender full. Refrigerate.

Cheesy Chicken Fajita Casserole
I have this recipe in the oven cooking right now as I am typing this post. It looks so delicious. It is colorful with the red of the tomatoes and the green of the arugula. I am trying to eat more fruits and vegetables so I also added onion and mushrooms.
Ingredients:
12 oz. box macaroni
1 tbsp. olive oil
1 onion, chopped
2 4-oz. cans sliced mushrooms
or 8-oz. fresh sliced mushrooms
2 jars alfredo sauce
**I used roasted red pepper
8-12 oz. cheese
1 pkg. bacon, cooked crisp and crumbled
1 pt. grape tomatoes, quartered
2 cups baby arugula, chopped
1 pkg. chicken southwest strips. chopped
Directions:
Heat olive oil in a large frying pan, briefly. Add chopped onion and saute until clear. Cook macaroni according to package directions. Add chicken to frying pan and heat until heated through, then chop into bite size pieces, add mushrooms, tomatoes, and arugula. Drain pasta and add alfredo sauce, bacon, half the cheese, and the chicken mixture. Salt and pepper to taste. Spray a 9x13 casserole dish with cooking spray. Put casserole mixture into dish and top with remaining cheese. Cover with aluminum foil sprayed with cooking spray. Bake at 375 degrees for 30 minutes or until heated through.
**If you are trying to cut calories and eat healthy you can use low fat cheese, turkey bacon, and whole wheat pasta.
